Strong Scotch Ale • Extract • 5 gal

Big Bad Brown

Shooting for a very smokey oakey scotch ale. Using two kinds of smoked malt because I want a lot of smoke but don't want too much peat. Using lots of whole red oak chunks. Still new to brewing so if something looks wrong it probally is.

  • 1.00 lbs Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • .25 lbs Peat Smoked Malt

    Earthy, rich smoke flavor

  • 0.5 lbs American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 10 lbs Dry Extra Light Extract

    Dry Extra Light Extract

    For making very pale ales and lagers.

  • 0.5 oz Northdown - 8.6 AA% pellets; boiled 60 min

    Northdown

    Mellow English higher alpha-acid hop.

  • 0.5 oz Wye Target - 10.0 AA% pellets; boiled 15 min

    Neutral high-alpha. Bred from Northern Brewer crossed with some Goldenings. Used for hopped malt extract and many English Ales.

  • 5 ea Oak Wood Chips - (omitted from calculations)
