Ingredients (All Grain5.25 gal)

  • 3.25 lbs German Dark Munich

    German Dark Munich

Enhances body and aroma. Stout, schwarzbier, brown ale, dark and amber ales.

  • 5.50 lbs German 2-row Pils

    German 2-row Pils

  • 0.50 lbs Chocolate Malt; Breiss

    Chocolate Malt; Breiss

Rich roasted coffee flavor. Characteristics & Applications: • Chocolate Malt is used in all beer styles for color adjustment with minor or no flavor contribution. • Use 1-10% for desired color in Porter and Stout Beer. • The chocolate flavor is very complementary when used in higher percentages in Brown Ales, Porters, Stouts and other Dark Beers. • Produced from AMBA/BMBRI recommended 6-Row Malting Barley varieties.

  • 0.50 lbs Carafa Special® TYPE II; Weyermann®

    Carafa Special® TYPE II; Weyermann®

German-grown two-row spring barley (2004 harvest). Product Characteristics: CARAFA SPECIAL® is the de-husked version of CARAFA®. Using our unique process, we remove the husks from carefully selected grains before malting and roasting them. Reduces astringency and bitterness, while adding coffee-brown color, a coffee-like bouquet, dark-beer aroma, as well as body and mouthfeel to finished beer—but without introducing harsh flavors. Even small amounts of CARAFA SPECIAL® malts in the grain bill produce dark beers of unusual smoothness and mildness with a firm, creamy, white head. Recommended Quantities: Up to 5% of total grain bill Suitability (beer styles): Lagers: Dunkel, Doppelbock Ales: Dark, Stout, Altbier

  • 1.00 lbs Caramel Malt 60L; Briess

    Caramel Malt 60L; Briess

Sweet, pronounced caramel flavor. Characteristics & Applications: • In contrast to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam, foam retention, and extended beer stability, while contributing color and unique caramel flavor. • 2-Row Caramel Malt 60L is a roasted caramel malt that imparts deep golden to red color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to amber and red beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

My Black Lager

As of 7/23/2011 this brew is in it's 2nd full week of lager at a temp of 45 degrees.Very smooth tasting lager. Was trying to shoot for the Rahr & Sons Black lager (ugly pug) but probably it more in the area of Shiner Black Lager. This is a more malty beer and very little hop in taste and to the nose, nice chocolate presents and a hint of coffee late after taste, as of now a very drinkable beer. In future i will try to increase the speciality grain just a tiny bit. Hey don't get me wrong the beer tools program hit it right on the head. I will bottle in 2 more weeks from now after we come back from vacation in the Dominican Republic. I will update in the future....
