Irish Moss
A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

White Labs WLP051 California Ale V
From Northern California. This strain is more fruity than WLP001, and slightly more flocculant. Attenuation is lower, resulting in a fuller bodied beer than with WLP001.
Notes
This is a great beer. I added 1/2 of Cascade (dry hop)which I think I will leave out on my next batch. Very tasty and easy to drink. Also might cut back a pound or so on the LME and add more Maris Otter and Victory.

Just not a big fan of the grapefruit.

I think I over shot the hops. It was an Okay beer, not my best. I am not sure if the yeast and hop combo was idea.
