Ingredients (All Grain22 L)

  • 2.22 kg Pale Ale Malt; Weyermann®

    Pale Ale Malt; Weyermann®

German-grown two-row spring barley (2004 harvest). Product Characteristics: Processed specifically for “English” characteristics. Highly modified for use with both single- or multi-step infusion. Perfect foundation grist for all ales, but yields great results in lager-making, too. Low protein and glucan levels for easy lautering and high extract efficiency. Provides excellent body, pale color, and complex maltiness to finished brew. Recommended Quantities: Up to 100% of total grain bill. Suitability (beer styles): All ales (including Stout, Porter, Belgian beers)

  • 2.24 kg Maris Otter Pale Ale Malt; Thomas Fawcett

  • 0.05 kg Carafa® TYPE II; Weyermann®

    Carafa® TYPE II; Weyermann®

German-grown two-row spring barley (2004 harvest). Product Characteristics: Carefully roasted to add coffee-brown color, espresso-like bouquet, dark-beer aroma, and body to finished beer. Produces opaque beer with mild, but noticeable roasted aftertaste. Recommended Quantities: Up to 5% of total grain bill Suitability (beer styles): Lagers: Dunkel, Doppelbock Ales: Dark, Stout, Altbier

  • 0.06 kg Crystal 120; Great Western

    Crystal 120; Great Western

As longer roasting times are used to reach colors of 120° ASBC, this crystal malt takes on a fairly intense toffee flavor but still avoids the burnt character of chocolate or black malts.

  • 53 g Cascade - 5.5 AA% pellets; boiled 60 min

    Cascade

Spicy with citrus notes. Slightly grapefruity.

  • 16 g Citra® - 12.0 AA% pellets; boiled 15 min

    Citra®

Citra™ is a special aroma hop variety developed by the Hop Breeding Company (a joint venture between John I. Haas, Inc. and Select Botanicals Group, LLC). It was released in 2007. Citra™ has fairly high alpha acids and total oil contents with a low percentage of cohumulone content. The variety imparts interesting citrus and tropical fruit characters to beer.

  • 16 g Amarillo® - 8.5 AA% pellets; boiled 1 min

    Amarillo®

Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.
