Modified version of http://beertools.com/html/recipe.php?view=2687 tweaked the grain and boosted the alcohol with Honey. Probably won't taste like Newcastle, but should be a pretty good Honey Brown.

Ingredients (Extract5 gal)

  • .15 lbs British Crystal 55°L

    British Crystal 55°L

    Sweet caramel flavor, adds mouthfeel and head retention. For pale or amber ales.

  • .11 lbs English Chocolate Malt

    English Chocolate Malt

    Dark malt that gives a rich red or brown color and nutty flavor. Use for: Brown ales, porters, some stouts Maintains some malty flavor, not as dark as roasted malt.

  • .5 lbs American Black Roast

    American Black Roast

    Adds a heavy roast flavor and dark color.

  • 6 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 1 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1 oz Target - 8.4 AA% pellets; boiled 60 min

    Used for its robust bittering ability in British ales and lagers. Aroma is quite intense.

  • .5 oz East Kent Goldings - 5.9 AA% pellets; boiled 15 min

Didn't get down to the gravity I was trying for so it was a bit sweet, and came out really dark. Probably wouldn't happen with only 1 lb of honey. Might wanna bring the American black roast down to .5 lbs too.

I will change the quantities as you suggested. did you mix the honey with extract and boil it or mixed honey last 10 minutse of boil or when? Also did you steep grains at 155F for 30 minutes or different setting? Thanks for your reply, e.

Yes, 155F/30Min, I usually add honey towards the end of the boil.
