  • 6 lbs Belgian Pale

  • 4 lbs Belgian Wheat Malt

  • .5 lbs Candi Sugar Clear

    Candi Sugar Clear

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

    White Labs WLP565 Belgian Saison I

    Classic Saison yeast from Wallonia. It produces earthy, peppery, and spicy notes. Slightly sweet. With high gravity saisons, brewers may wish to dry the beer with an alternate yeast added after 75% fermentation.

Notes

Mash at 145-150. with saisons I tend to pitch hot (85F+), then let cool down to 65-70F and then ramp up ferm temp after the first 48 hours back to 80ish

changed a few things for this version. upped the wheat malt and oats, pulled the belgian pale back a little too. more late additions of sorachi ace to try bring out the flavor a bit more. also added the zest of 2 lemons and one lime and a tbsp of cracked coriander seed to the boil 5m from flameout. Changed the yeast from 568 back to 565. I wanted to experiment with WLP566 on this batch but it isn't out yet. hopefully will finish fermenting before an upcoming trip so I can bottle it before and have it ready when I return.
