This is the first batch of beer to be brewed on the new 3-keg gravity system out on the side of the house (the one the missus is already griping about!). I'll tell you how it turns out.

Ingredients (All Grain, 5 gal)

Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

Crystal Malt 40°L
Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

Northern Brewer - 6.9 AA% whole; boiled 70 min
Northern Brewer
Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

Cascade - 7.0 AA% whole; boiled 10 min

Spicy with citrus notes. Slightly grapefruity.

Wyeast 2565 Kolsch
A hybrid of ale and lager characteristics. This strain develops excellent maltiness with subdued fruitiness, and a crisp finish. Ferments well at moderate temperatures.
Notes
-Strike 9.5 lbs of grains into 3 gallons of water (boiled, .5 tsp gypsum added at 170 F. -Mash for 90 minutes between 155 and 148 F. -Sparge with 170 F water (boiled, gypsum added at 1 tsp/5 gal)to obtain 6.5 gallons of wort. -(no mash-out) -Boil entire volume for 90 minutes, making firts hop addition after hot break. -Dry hop in primary with 2 oz. Cascade (not shown in recipe).
