Belgian Dark Strong Ale • All Grain • 2 gal
This ale is geared toward an Orval. This will be my second attempt at this brew but I will be changing a few things around. My first attempt ended up with an infection so I will try this again. It is in primary as of 3-7-2011. I will update with tasting notes as soon as I can.

Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

Crystal or Caramel malts have a distinctive toffee flavour, which becomes more intense as colour is increased, and at the higher end of the colour range burnt or roasted malt flavours may begin to appear. Traditionally in the UK, Crystal malt of colour 70 -80 °ASBC has been used at about 5% of the grist to give the characteristic colour and flavour of UK Bitters and Pale Ales. Adjustment of the amount and/or colour of the Crystal malt may brew some very distinctive beers, but this may require some careful experimentation. Crystal malts have been used in the brewing of Lager beers, but considerable care is required to ensure that whilst a distinctive flavour is achieved, the crystal flavour and colour does not become too dominant. In all beers they can help prevent the formation of oxidised (cardboard) flavours.

White Labs WLP500 Trappist Ale
From one of the six Trappist breweries remaining in the world, this yeast produces the distinctive fruitiness and plum characteristics. Excellent yeast for high gravity beers, Belgian ales, dubbels and trippels.
Notes
Mash schedule: 30 min @ 122; 15 min at 144; 30 min @ 158; 5 min @ 170. Ferment in primary @ 74F for 7 days and secondary @ 74F for 3 days. I have used the last hops addition as a dry hopping at 1 min. The dry hopping is done in the secondary. My first hops addition is .2 ozs of Norther Brewer and .4 ozs of Magnum. The Crystal 55 malt is actually Cara Brown from Briess.

Beautiful full bodied Belgian beer

This beer is perfect... Very strong plum flavor and amazing body. If you like Orval you will like Little Jack Horner. It is not exactly like Orval but has the same basis... High fermentation temps. (Esters, Esters, Esters) If you brew this beer be sure to cabonate hevily... Just about chapagne levels. I have brewed about 30 beers and this beer is in the top 5.
