Irish Moss
A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

Five Star 5.2 pH Stabilizer. A proprietary blend of food-grade phosphate buffers that locks in your mash and kettle water at a pH of 5.2, regardless of the starting pH. It also reduces scaling and mineral deposits on brewing equipment. 1 pound. Use at the rate of 1 tablespoon per 5 gallons of water.

Classic pilsner strain from the home of pilsners for a dry, but malty finish. The perfect choice for pilsners and bock beers. Sulfur produced during fermentation dissipates with conditioning.
Notes
Sunbeam hops were used at the 45, 30, and 1 minute pitches. BG = 1.052 OG = 1.058 TG = 1.018 ABV = 5.25% Utilized the basement during winter where it kept the primary at a steady 55-58F for 3 weeks. Racked to secondary and chilled with bags of ice for another 3 weeks at 45-48F. Bottled.

My first attempt at a lager and I'm very happy with the results. Two weeks in the bottle, it's clean and crisp, just like it should be, and no apparent off flavors despite the fact that I bypassed the diacetyl rest. It was also the first time using the Sunbeam hops we grew this past year. They are supposed to be similar to Saaz and it's definitely got that signature flavor, but it's hard to tell. There's a great floral pressence, however I don't think it's as big in IBUs as it calculated.
