Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

Sweet, Pronounced Caramel. Characteristics & Applications: • In contrast to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • 2-Row Caramel Malt 60L is a roasted caramel malt that imparts deep golden to red color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to amber and red beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

Unmalted roasted grain, it is the backbone of many stouts. Imparts a sharp acrid flavor characteristic of dry stouts. Gives "dryness" to a stout or porter ,more so than regular Roasted Barley.

Irish Moss - 30 min into boil (omitted from calculations)
Irish Moss
A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

Surley Furious is amazing. But the ingredients are not as common. The Surley Clone recipes out there are as follows: 11 pounds of Golden Promise 1 pound of Munich 10L .25 pound of crystal 60L .25 pound of Black Barley 1oz Warrior or Magnum for 60 Min 1/5 oz Amarillo/Simcoe Blend 20 Min 1/5 oz Amarillo/Simcoe Blend 15 Min 1/5 oz Amarillo/Simcoe Blend 10 Min 1/5 oz Amarillo/Simcoe Blend 5 Min 1/5 oz Amarillo/Simcoe Blend 0 Min Dry Hop: 1 oz of Amarillo, 1 oz of Simcoe, and 1 oz of Ahtanum. Since I will be conforming to my local brew shop's inventory, I will be following the below recipe: I will be using the grain bill as shown in the calculated recipe, but a hop schedule of the below: 1oz Nugget for 70 Min 2/5 oz Centennial/ Simcoe Substitute 20 Min 2/5 oz Centennial/ Simcoe Substitute 15 Min 2/5 oz Centennial/ Simcoe Substitute 10 Min 2/5 oz Centennial/ Simcoe Substitute 5 Min 2/5 oz Centennial/ Simcoe Substitute 0 Min Dry Hop: 1 oz of Cascade, 1 oz of Simcoe Substitute *(Simcoe substitute consists of 1oz Cascade, 1 oz Chinook, and 1 oz Cluster blended together) Mash at 152 Fahrenheit for 60 minutes. I always like to soak my grains for about 30 minutes at about 120 Fahrenheit to make them more soluble and to lower the PH.
