Notes

This is my mainstay ale, huge cascade flavor but enough maltiness comes thru for a very drinkable IPA. Infusion Mash at 154 deg for 90 minutes. Adjust water to slight hardness and use lactic acid in sparge water. Mash in 3.5 gallons of water and sparge to get 6.5 gallons into boil kettle.
