Trying to recreate an extract recipe I once made and loved.

Ingredients (All Grain, 5 gal)

2-Row Brewers Malt; Briess

Mild malty flavor. Characteristics & Applications: • Base malt for all beer styles • Smoother, less grainy flavor than 6-Row Brewers Malt. • Slightly higher yield than 6-Row Brewers Malt. • Slight lower protein than 6-Row Brewers Malt. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

Cascade - 5.5 AA% pellets; boiled 60 min

Spicy with citrus notes. Slightly grapefruity.

Centennial - 10.0 AA% pellets; boiled 15 min

Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

Notes
Boiled 12-19-10 and ended up with OG of 1.072 (Brix 17.6). Pitched 1 qt starter made from White Labs California Ale.

This turned out okay but I needed more of a hop flavor out of it. OG and FG did not hit my targets but were acceptable. I have to do a little more work.
