  • 1/2 lbs Crystal Malt 10°L

    Crystal Malt 10°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales. Characteristics & Applications: • In contract to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1/2 lbs Torrified Wheat

    Helps head retention and mouthfeel, used in some pale ales.

  • 1 3/4 oz Hallertau - 4.5 AA% pellets; boiled 60 min

    Hallertau

    Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

  • 1/8 oz Tettnanger - 4.5 AA% pellets; boiled 15 min

    Mild, slightly spicy. 'Noble'.

  • 1/8 oz Hallertau - 4.5 AA% pellets; boiled 15 min

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

    From the Ardennes region of Belgium, this classic yeast strain produces moderate levels of ester and spicy phenolic character. Typically results in a dry, but balanced finish. This yeast is well suited for Belgian dark strongs, Abbey Ales, and seasonal beers.

I've tried to edit the name to no avail. It should be Whoop De Do Grand Cru. This should be a great strong, festive holiday ale. Primary for 7 to 10 days and secondary for up to three weeks.

I brewed this beer in mid October and bottled it in early December. For a beer with a high ABV, it has a great flavor that is not overpowered by the alcohol, The spices and the orange make this a very tasty beer. I only wish I had brewed it earlier in the year. It would be great as a holiday beer. If there's any left, I'll enjoy next Christmas. Many thanks for the inspiration for this beer to Manayunk in Philadelphia. They brought an outstanding beer last summer to the beer festival at Stoudt's. Best of show, in my opinion!
