  • 14 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • .75 lbs American Caramel 80°L

    American Caramel 80°L

    Mild caramel,nutty flavor, sweet. adds color(Red Ale)

  • .25 lbs Black Roasted Barley

    Black Roasted Barley

    Unmalted roasted grain, it is the backbone of many stouts. Imparts a sharp acrid flavor characteristic of dry stouts. Gives "dryness" to a stout or porter ,more so than regular Roasted Barley.

  • .8 oz Magnum - 13.7 AA% whole; boiled 90 min

    Rich with a dry finish, minerally profile, bold and crisp, with some fruitiness.

Notes

Mash at 154 deg. Strike temp 168 with 4.6 gallons. Sparge with 4.5 gallons of 175 deg water. Add 1/2 tsp cinnamon, 1/4 tsp. dried/ground ginger, 1/8 tsp nutmeg and 1/4 tsp allspice at 1 minute left in boil. If spice is lacking add spices to secondary.
