Ingredients (All Grain2 gal)

  • 1.5 lbs Belgian Special B

    Belgian Special B

  • 1 lbs Dextrine Malt

    Dextrine Malt

    In light-colored beers to give additional body. Adds richness without color.

  • 1 lbs American 6-row Pale

    American 6-row Pale

    Tends to increase lautering efficiency due to a stiffer husk. May be used as the base malt for any beer style. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts.

  • 1.5 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • .5 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • .5 lbs Candi Sugar Dark

    Candi Sugar Dark

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • .5 lbs Molasses

    Molasses

    Imparts strong sweet flavor. Use in stouts and porters.

  • .4 oz Hallertau - 4.5 AA% whole; boiled 60 min

    Hallertau

    Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

  • .5 oz Goldings - 5.0 AA% pellets; boiled 12 min

    Mild. Slightly flowery.

  • .2 oz Goldings - 5.0 AA% pellets; boiled 3 min

  • .5 oz Nutmeg (ground) - 1.5 ounces of Ginger (Ground) (omitted from calculations)

    Nutmeg is pungent and sweet. Nutmeg is the seed of Myristica fragrans, an evergreen tree native to the Molucca Islands. Interestingly, the tree produces both Nutmeg and mace, and grows up to 60 feet tall. Although the tree takes seven years to bear fruit, it may produce until the 90th year. Both spices come from the trees fruit, which splits into a scarlet outer membrane, mace, and an inner brown seed, Nutmeg.

  • 2 oz Vanilla (extract) - 1 ounce Cinnamon (Ground) (omitted from calculations)

    Vanilla Beans have a sweet, perfumed aroma with a woody or smoky flavor. Pure Vanilla Extract has a similar aroma. To obtain Pure Vanilla Extract, cured Vanilla Beans are steeped in alcohol. According to law, Pure Vanilla Extract must be 35 percent alcohol by volume.

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

Mash schedule: 30 min @ 122; 30 min @ 145; 30 min @ 158; 5 min @ 170. Ferment @ 74. Primary for 5 days and secondary for 3 days.

Beer tasting notes

This beer was a first in that I have never used molasses. The beer was so thick coming from primary that I had to dump the remains of the unconverted molasses and yeast down the drain. The beer had a medicial taste that was strong. It looked like used motor oil and was very thick. I will not use molasses in any of my beers again.

Substituted Dark Maple Syrup for mole-asses - good. Substituted cinnamon sticks for ground but doubled to 2 oz - bad. Also added 1.5 oz orange peel - good. Poured great, smelled great, but the extra oz of cinnamon was overpowering. Came away with about 8% or 9�V and it was definitely a warmer with a nice tan head! I will make again but just 1oz cinnamon.... Thanks Mike!
