These malts are highly modified, caramelized and slightly roasted and are especially well suited to beers requiring additional caramel malt flavor and color.

Classic Saison yeast from Wallonia. It produces earthy, peppery, and spicy notes. Slightly sweet. With high gravity saisons, brewers may wish to dry the beer with an alternate yeast added after 75% fermentation.

Split into two fermetors: WL Saison in one, and a Saiaon/Abbey blend that has been run through batches in the other. O.G. 1.064.
Checked gravities after 8-9 days

Looking like this is done-- yeast is starting to drop. FG is at 1.011 for both batches. Tasting good.
Brewed this again with a few changes

Just tweaked the malt a bit added a bit of cara-munich & went to all goldings on the hops. Very happy with this!
