Steph's Honey (Amber Ale)
American Amber Ale • All Grain • 5.25 gal
This turned out nice, but a little over on the gravity (1.060). Has a distinct alcohol bite upon first tasting (after 3 weeks in the bottle). It has mellowed somewhat after a couple more weeks, here's hoping it will mellow even more in the weeks to follow.

Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.
Notes
Brewed 08/20/10: Mashed grains @ 154f for 1 hr, performed vorlauf for ~20 minutes, then sparged grains @ 170, collecting 6.5 gal of wort. Boiled for 90 minutes, dropping in Nugget hops @ 45 minutes, first Liberty hops @ 15 along with whirlfloc tablet, then second Liberty addition @ 2 minutes. Added 1lb of honey @ flameout. Stirred vigorously during cooling period to aerate (~ 20 minutes to cool), then checked OG, which came out a little high @ 1.060. Pitched yeast with wort @ ~75f, primary for 10 days, checked FG which came in @ 1.010, transferred to secondary, and will bottle later this week. Conditioning in the bottle at a minimum of 2 weeks.

Discussion
Good flavor, but...

...I brewed this a couple of months back, but due to the 1lb of honey I added at the end of the boil, it came out a little too high on the alcohol. I thought it might smooth out some after conditioning for a while, but the alcohol is still pretty noticeable. I'll cut the honey in half next time, or do away with it altogether and maybe added some honey malt instead. Otherwise, this turned out pretty well.
