Ingredients (All Grain5 gal)

  • 4 lbs Standard 2-Row; Rahr

    Standard 2-Row; Rahr

Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 3 lbs Maris Otter; Crisp

    Maris Otter; Crisp

An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • .15 lbs Roasted Barley; Simpsons

    Roasted Barley; Simpsons

A typical ingredient of Irish dry stouts.

  • .45 lbs Maple Syrup

    Maple Syrup

Imparts a dry, woodsy flavor if used in the boil. If beer is bottled with it, it gives it a smooth sweet, maple taste. Use in maple ales, pale ales, brown ales and porters.

  • .25 oz Summit™ - 17.0 AA% pellets; boiled 120 min

    Summit™

Super-high alpha hop with a low cohumulone content and a strong orange/tangerine citrus character.

  • 1 tsp Irish Moss - 15 minutes left to boil (omitted from calculations)

    Irish Moss

A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

  • Wyeast 1728 Scottish Ale™

    Wyeast 1728 Scottish Ale™

Ideally suited for Scottish-style ales, and high gravity ales of all types.

I have drank this beer...and it is fantastic. I'm brewing it over Labor Day weekend.
