This beer is the third incarnation of a copy of John Courage Director's Bitter, my favorite while in London. It's pretty close, dry hop if desired.

Ingredients (All Grain25 gal)

  • 32 lbs English 2-row Pale

    English 2-row Pale

    All English Ales. Workhorse of British Brewing. Infusion Mash.

  • 3 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .3 lbs English Black Roast

    English Black Roast

    Adds a heavy roast flavor and dark color.

  • 1 lbs Corn Sugar

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • 1 oz Hallertau - 4.5 AA% pellets; boiled 15 min

    Hallertau

    Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

  • 3.2 oz Target - 8.0 AA% pellets; boiled 60 min

    Target

    Used for its robust bittering ability in British ales and lagers. Aroma is quite intense.

  • 1 oz Styrian Goldings - 4.5 AA% pellets; boiled 15 min

    Mild, pleasant.

  • 2 oz Styrian Goldings - 4.5 AA% pellets; boiled 1 min

    Mild, pleasant.

  • Wyeast 3766 Cider

    Wyeast 3766 Cider

    Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.
