Irish Moss
A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

Brewed this on the 14th of July, and bottled on the 29th of July. First consumed on August 14th. Just amazing! The fiancee and her mother loved it (and they don't even drink beer). Excellent mouthfeel, slightly thick with a thick white head that lasted throughout the entire consumption. The flavour is mildly sweet with notes of grapefruit and strong wheat back. Excellent! Excellent! Excellent! Staying in the portfolio!
