This is the first of many attempts. Im attempting to clone a Chimay.

Ingredients (All Grain2 gal)

  • 4 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 2 lbs American Caramel 40°L

    American Caramel 40°L

    Provides color, a unique flavor, body, and contributes to foam retention and beer stability.

  • .5 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • .3 oz Cascade - 5.5 AA% pellets; boiled 60 min

    Spicy with citrus notes. Slightly grapefruity.

  • .7 oz Cascade - 5.5 AA% pellets; boiled 5 min

  • .5 oz Corriander crushed - Start of boil (omitted from calculations)

    White Labs WLP500 Trappist Ale

Brewed it, and liked it.

I brewed this beer and bottled one a little early. The beer has a very nice head; nice fragrant bouquet with slight citrus notes. Taste is full bodied with a touch too much bitterness. I would drop the 60 min hops addition to .3 ounces. I will be changing this recipe until it's exact. They will have the same name but there will be roman numerals to signify the edition.

I have adjusted the hops amounts and times to get the bitterness under control. I have read that the honey should be added later in the boil with only 5 min. left in the boil as to not boil off the delicate flavors and aromas.
