A dry fermenting, true top cropping yeast which produces a dry, slightly tart, crisp beer, in American hefeweisen style.
Notes
Single infusion mash at 152 degrees F for 60 min, or until conversion complete. Batch sparge method and collect 6.5 gallons in brewpot and boil 1 hour adding hops accordingly. Primary fermentation 12 days in bucket. Transfer to keg adding 4oz of corn sugar, seal and let sit for 5 days at room temp. Chill 1 day in kegerator (with temp control) at 45 degrees, hook up Co2 and serve!
