This is probably a bit too aggressive on the hops, but I wanted to ensure a good sense of the Fuggle and Goldings. Oak chips were added to secondary for two weeks.

  • 11 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 0.5 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 0.5 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • 1 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1.0 lbs Corn Sugar

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • 0.5 lbs Barley Flaked

    Helps head retention, imparts creamy smoothness. For porters and stouts.

  • 1 oz Fuggle - 4.8 AA% whole; boiled 60 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 1 oz Goldings - 5.0 AA% whole; boiled 60 min

    Mild. Slightly flowery.

  • 1 oz Fuggle - 4.8 AA% whole; boiled 30 min

  • 1 tsp Irish Moss - (omitted from calculations)

    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

    Oak Wood Chips

    Adds a pungent woody flavor. Adding oak chips (which is done in the fermenter, not the mash tun) can add some interesting flavors to your homebrew as well as acting as a surface area to accelerate aging. To provide aged-in-oak flavor. Used in some IPA to simulate flavors from ocean passage to India.

    Wyeast 1968 London ESB Ale™

    Highly flocculant top-fermenting strain with rich, malty character and balanced fruitiness. This strain is so flocculant that additional aeration and agitation is needed. An excellent strain for cask-conditioned ales.

The 1 lb of American 2-row was an ESB Malt. BG = 1.044 OG = 1.062 TG = 1.011 6.7% ABV

Three weeks in the bottle and it's tasting really nice, smooth and easy, very good for hot summer days. As mentioned, I probably did go a bit big on the hops for the style, but in tasting it I really don't think it's too overboard. There's definitely a clear hop presence, but it's still balanced really well with malt flavor. I was going to dry hop it and I'm glad I didn't because I think that allows the malt to shine through a bit more. The oak chips are slightly noticeable with a subtle chalkiness. This is my second attempt at an ESB and I like this one much more than the first.
