Wyeast 1056 American Ale™
Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.
Notes
Corn grits actually corn flour. Flour gummed up the works. Mash would not flow. What a mess. Was able to sparge but only by pressing the first runnings out of the grain bed . Then resusspending the mash in the sparge water (80C) and finally it flowed. Needed Muselin bag to get the mash drained and sparged. Extract efficiency still good, but carried a lot of solids over to the boil. Boiled 3 hrs becuase I had something to do.

The beer after 2 weeks in the keg is actually pretty clear considering the mess in the mash and boil. Flavor was off though. Not sure, but it tasted a bit musty to me. maybe the yeast was getting old in the fermentor after 3rd pitch from previous beers. Next time will use German hops.
