Ingredients (Extract5 gal)

  • 1 lbs English Chocolate Malt

    English Chocolate Malt

    Dark malt that gives a rich red or brown color and nutty flavor. Use for: Brown ales, porters, some stouts Maintains some malty flavor, not as dark as roasted malt.

  • .75 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • .5 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 4.5 lbs Dry Amber Extract

    Dry Amber Extract

    Cream-colored and full-flavored; will produce amber colored beers such as pale ales, IPAs, and bitters. Made of pale and crystal malts.

  • 1 lbs Dry Wheat; Muntons

    Dry Wheat; Muntons

    Made with a preponderance of wheat malt (55%) for the production of wheat or Weiss beers. Contains no colored malts or hops.

  • 1.5 oz Fuggle - 4.8 AA% pellets; boiled 60 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

I brewed this up a few weeks ago and the flavor came out great, except that I screwed something up. I have absolutely no head with this beer and it really bums me out because I was excited about this one. I will try it again for sure though.

I'm a newby here. Where's the "procedure" part of the brew? - boil times, etc.

Sam Adams Cream Ale is a favorite of mine and I brewed this clone. I even screwed it up!!! (The first time in 35 years of brewing) - and I saved it with some triage. It took 2 1/2 months to fully mature but the wait was worth it. At one month it was way too sweet and it scared me.

I've brewed this many times, hard to screw up, easy to make. Be careful not to fill the carboy up too high, it's gonna BLOW the top off! Let sit for at least 1 month, pour slowly. Nice biscuit taste, easy to drink!

I've tried and failed at an Oatmeal Stout recipe but I'm still excited to give this one a go. @Bob the Brewer: I might have screwed up mine the same way you did. It's too sweet and maturing VERY slowly in the bottles. What went wrong with yours and how did you fix it?

I just bought the last six pack of this and love it. I make wind but have no idea how to brew beer and want to make this. Can some give dm step by step directions and any extra tools I will need that differ from wine making? Thanks in advance.
