This is allegedly the homebrew recipe which became the great Sculpin IPA

Ingredients (All Grain5 gal)

  • 11 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1 lbs Belgian Cara-Pils

    Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • .5 lbs Belgian Caravienne

    Belgian Caravienne

    Belgian light crystal malt. Used in lighter Abbey or Trappist style ales.

  • 1.25 lbs Crystal Malt 10°L

    Crystal Malt 10°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales. Characteristics & Applications: • In contract to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

  • .5 oz Warrior® - 16.3 AA% pellets; boiled 60 min

    New hop with much potential. Very stable.

  • .25 oz Magnum - 15.9 AA% pellets; boiled 60 min

    Bred in 1980 at Germany’s Hüll Hop Research Center, this high-alpha variety is renowned for its exceptionally large, heavy cones. Hallertauer Magnum delivers excellent yields and, like many Hüll-developed hops, boasts a strong resistance to disease.

  • .25 oz Northern Brewer - 7.1 AA% pellets; boiled 60 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • .25 oz Columbus - 16.1 AA% pellets; boiled 60 min

    Columbus

    Used mainly for bittering with some flavor qualities as well. Aroma is pleasant.

  • .25 oz Crystal - 3.6 AA% pellets; boiled 30 min

    Crystal

    Mild. 'Noble'. Used mainly for its aroma which is mild and pleasant.

  • .25 oz Centennial - 9.9 AA% pellets; boiled 30 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • .25 oz Simcoe® - 13.6 AA% pellets; boiled 30 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • 1 oz Simcoe® - 13.6 AA% pellets; added dry to secondary fermenter

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • 2 oz Amarillo® - 9.4 AA% pellets; added dry to secondary fermenter

    Amarillo®

    Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • 1 ea Whirlfloc Tablets (Irish moss) - at 15 minutes left in boil (omitted from calculations)

  • White Labs WLP001 California Ale

    White Labs WLP001 California Ale

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

Mash at 150 for 90 minutes. Boil for 75 minutes. Add 1 oz. Amarillo as Mash Hop. Also add 1 oz. Amarillo at Flameout.

It looks like their brewers choice of hops for sure. May be more bitter than the brewery's though. Please share your results when you drink!

Ballast states Sculpin in 70 IBU's Let us know how this one turns out. IMHO Sculpin is their best brew to date.

IBUs do look high

I have not brewed this yet, but I'm thinking of combining the different 60 minute boiling hops into 1 Warrior hop addition. I buy hops by the ounce and buying a complete ounce just to use a quarter of that isn't feasible. Warrior shouldn't disagree with the flavor of Amarillo and Simcoe either. I do agree that 100 IBUs seems excessive, but this is the recipe I found. When I brew it, I'll probably adjust to get around the mid 70s. Sculpin's definitely about the flavor and aroma, not the bitterness.

Adjusted Bitterness

After a little research, found out many probrewers prefer Tinseth scale for calculating bitterness units. Previous incarnation of this recipe which some have commented on used BeerTools scale and came to 100 IBUs. Now that it's edited for Tinseth, IBUs are closer to what Ballast Point reports.
