The most famous ale yeast strain found across America, now available as a ready-to-pitch dry yeast. Produces well balanced beers with low diacetyl and a very clean, crisp end palate. Sedimentation: low to medium. Final gravity: medium. Pitching instructions: Re-hydrate the dry yeast into yeast cream in a stirred vessel prior to pitching. Sprinkle the dry yeast in 10 times its own weight of sterile water or wort at 27C± 3C(80F ±6F). Once the expected weight of dry yeast is reconstituted into cream by this method (this takes about 15 to 30 minutes), maintain a gentle stirring for another 30 minutes. Then pitch the resultant cream into the fermentation vessel. Alternatively, pitch dry yeast directly in the fermentation vessel providing the temperature of the wort is above 20C(68F). Progressively sprinkle the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes and then mix the wort e.g. using aeration.

4/9/10-removed blow off tube and put regular airlock on. Pulled gravity sample: 1.024, still very cloudy, but an amazing copper/orange color! Pleasant, intense bitterness with a slight sweetness. I plan on transferring this to the secondary before it can fully attenuate and eat all the sugars!

4/18/10-racked to secondary on 4/14/10 with gravity at 1.024, still a decent amount of unfermented sugar, but I wanted this to balance out the INTENSE grapefruit bitterness of the Nugget. Also, tossed in 1 oz. of Nugget to dry hop. So far, so good, should store/age well.

4/23/10-bottled. Final gravity dropped to 1.022 Very pleasant and profound citrus aroma from the dry hopping. Sweet, caramel taste and a blast of intense grapefruit hoppiness in the finish. BEAUTIFUL bright orange and copper, couldn't ask for a nicer color. I'll give it a couple weeks to carbonate and condition and give these a proper try.

5/4/10 update: Opened a pint, poured a bright, but heavy orange-copper. Great lacing, grapefruit aroma. Very crisp and heavy mouthfeel, but a fine example of an American IPA. My best friend is not a fan of IPA's and said he would drink another!

I just finished brewing this one. The only thing I changed was that I switched out the nugget hops for norther brewer hops. 8 hours in the primary and have the start of the krausen. OG was 1.072 because I upped the amount of grain a bit. Should be a good one.
