Ingredients (All Grain5.5 gal)

  • 13 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • .5 lbs American Caramel 40°L

    American Caramel 40°L

    Provides color, a unique flavor, body, and contributes to foam retention and beer stability.

  • .5 lbs German Wheat Malt Light

    German Wheat Malt Light

    Typical top fermented aroma, produces superb wheat beers.

  • .75 lbs Corn Sugar

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • 1.5 oz Cascade - 5.6 AA% whole; boiled 90 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 2.5 oz Magnum - 14.5 AA% whole; boiled 90 min

    Magnum

    Bred in 1980 at Germany’s Hüll Hop Research Center, this high-alpha variety is renowned for its exceptionally large, heavy cones. Hallertauer Magnum delivers excellent yields and, like many Hüll-developed hops, boasts a strong resistance to disease.

  • 1.5 oz Chinook - 13.0 AA% whole; boiled 90 min

    Chinook

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 1.67 oz Simcoe® - 13.0 AA% whole; boiled 45 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • .67 oz Columbus - 15.0 AA% pellets; boiled 30 min

    Columbus

    Used mainly for bittering with some flavor qualities as well. Aroma is pleasant.

  • .33 oz Amarillo® - 8.5 AA% pellets; boiled 30 min

    Amarillo®

    Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • 1.33 oz Simcoe® - 13.0 AA% whole; boiled 5 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • 1.5 oz Centennial - 10.0 AA% pellets; added dry to secondary fermenter

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 2.5 oz Columbus - 15.0 AA% pellets; added dry to secondary fermenter

    Columbus

    Used mainly for bittering with some flavor qualities as well. Aroma is pleasant.

  • 1.5 oz Simcoe® - 13.0 AA% pellets; added dry to secondary fermenter

    Used for aromatic, and especially bittering properties.

  • 1 tsp Irish Moss - (omitted from calculations)

    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

  • .5 tsp Wyeast Nutrient - (omitted from calculations)

    Wyeast Nutrient

    Although wort is a good growth medium for yeast, additional Wyeast Nutrient will reduce lag time, improve yeast viability and provide consistent attenuation rates. Low assimilable nitrogen concentrations (FAN) of grape must or wort have long been known as a cause of sluggish or stuck fermentations. Wyeast yeast nutrient, a blend of vitamin B's, minerals, inorganic nitrogen (DAP), organic nitrogen (amino acids), zinc, phosphates and other trace elements will benefit yeast growth and carbohydrate uptake for a more rapid, complete fermentation. Use 1/4 tsp per pint for beer propagation, 1 tsp per 5 gallons for wine or beer fermentation or 1.5 oz per 10 barrels for beer fermentation.

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

First brewed 10/08. A year of aging has made this one blossom into an awesome IPA.

Holy living f@#% that's a bitter glass of beer! I'm jealous of your resources and deeply impressed by your patience, I'm not sure I could endure a year of aging. It must have been a very special occasion when that monster was decanted. 342 IBU. Wow, fine work.

You cannot believe the IBU calculation. Beertools doesn't allow for the fact that the solution can only hold so much iso-alpha acids. The IBUs are probably around 125.

This is a moderately expensive beer to brew, but you cannot get a beer like this from a store or brewpub--they can't afford to brew it. It will cost you about $60.00 to make 5 gallons. But, it's a prize winner and a terrific beer.
