Notes

Add to the secondary a mix of ginger, anise, clove, cinnamon, and orange peel either dried or fresh. I suggest adding this a few days before you plan to bottle. Adding this stuff to the boil will give you bitter off flavors.

Not too bad

Well I didn't have the peat malt so I had to use other roasted malts, which weren't the same. I also used Mulled Wine spice in a premixed tea bag type thing. I wouldn't go that route again. I would just mix my own spice mix. I also added my mix to the last few of the boil, which I wouldn't do this next time around. I got some bitter off flavors which I would love to live without. I'm definitely going to do this again, but just order my malts to make sure I'm doing it right. But it still isn't that bad.
