I hade to change the hops based on my LHBS, used Chinook and Williamette and Abbey instead of Trappist yeast. Seeds of paradise crushed and added at 15min. Wort came out very black, smelled strongly of Willamette, tasted sweet with a solid aftertaste of chocolate. Excited.

20 days in the Secondary aged this mf very well. Aroma was all brown sugar and prunes not unlike a wine. It tasted like liquid justice: coffee, bitter chocolate, molasses, raisins, and semi-sweet. Very smooth and easy to drink. This will not last long was carbonation hits so I will have to brew it again...
