Amazing Humperdinck's Seasonal Special
Specialty Beer • Partial Mash • 5 gal
I brewed and bottled this beer I want it ready for Christmas. I put it in nice champagne bottles also. I used just a touch of the grains of paradise along with a 1/8 inch thumb sized portion of ginger and 1 ounce of orange peel. these additions were made later in the boil. I also boiled a package of black mission figs from Trader Joe's that I chopped up. This beer tasted great from the samples I took. SG 1.060 FG 1.016

Eric's quote "this is your best one yet" The first bottle taste was awesome. It has a beautiful amber with red cranberry hue the bottles are really conditioned like champagne those little Belgian buggers are tough. They did more work after bottling to really dry the beer out. The first aromas are of the wonderful Black Mission Figs then a little malt and a little citrus and hop scents very little alcohol aroma. The head is nice and milky with a fair amount of retention. Then when you get to glide it over your tongue it takes you to a new place of wonderment the style and name suggest a very strong flavored and high alcohol beer but it is much more mild than I thought it would be. The spice flavors from the orange peel, ginger, and grains of paradise are not overwhelming at all. They fit very nicely with this totally awesome mild holiday beer. One to try with you friends and family. Well done. This one will age well too. I opened the bottle and the yeast are still alive and happy they almost jumped to top of the bottle.
