Coconut (Cocos nucifera) belongs to the Palm family Arecaceae and is found growing around the world in lowland, tropical and subtropical habitats. Classed as a fruit, it is actually a one-seeded drupe. What we buy in shops is the "stone" of this drupe, consisting of a hard shell (the endocarp) which encloses the seed. The meat has a mild nutty sweet flavor.

This is certainly a crowd favorite. This is certainly not subtle with the tropical fruit flavors, but overall, it works quite well as a pina colada substitute. I purposely avoided the more acidic tropical flavors in fear that they might introduce the "fermented orange-juice problem" (i.e. nasty-off flavors). So far, the reviews have been universally positive, which is quite a relief.

The flavors are starting to mellow and are frankly, growing a bit 'amorphous', if I may borrow an adjective. The only really distinct flavor left is pineapple. This could use a touch more hops, both for later complexity and to improve the shelf-life.
