Ingredients (Extract5 gal)

  • 0.85 lbs Belgian Chocolate Malt

    Adds a nutty flavor, Brown Ales

  • 1 lbs Belgian Special B

  • 0.5 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 4.5 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 0.75 lbs Lactose

    Lactose

    Adds sweetness and body. Use in sweet or milk stouts.

  • 1 oz Fuggle - 4.8 AA% pellets; boiled 60 min

Notes

Brewed on 8/8 Transferred to secondary on 8/16 and added Cherry juice and vanilla; looks and smells promising! Bottled 9/5 and tasted on 9/18. Aroma and taste in line with style guidelines and my expectations. Slightly undercarbonated - going to let these sit for 2 more weeks and see if carbonation picks up.

Great cold weather beer...

Third time brewing this and tweaking this particular recipe. I'm finally happy with where it's at. Nice balance of roasty notes and sweet/tangy flavors. Still not as "vanilla-y" as I might like, it's delicious.

just enjoy the brewing experience. if you've done other all grain brews, you'll have no trouble with this one. it's the perfect time of year to brew a stout!!

Carbonation?

Did the carbonation ever come up after waiting or did it stay undercarbonated?

Yes - carbonation picks up fine as it ages for an extra week or so. Great fall beer.

That's great news about the carbonation, any further recommendations for tweaks as far as bringing out the vanilla? I just ordered some pureed cherries in preparation for this wonderful concoction. I want to have it ready for Christmas.
