Ingredients (Partial Mash5 gal)

  • 3 lbs Belgian Pils

    Belgian Pils

    Pilsner style malted barley grain.

  • 1 lbs Crystal Malt 80°L

    Crystal Malt 80°L

    Body and Richness. Distictive Nutty flavor and or sweet, smooth caramel flavor and a red to deep red color. For porters, old ales.

  • .5 lbs Caramel Wheat Malt

    Caramel Wheat Malt

    For dark ales, hefeweizen, dunkelweizen, wheat bocks and double bocks.

  • .5 lbs Midwest Wheat Malt

    Midwest Wheat Malt

    Light flavor and creamy head. For American weizenbier, weissbier and dunkelweiss.

  • 6 lbs Pale Liquid; Alexanders

    Pale Liquid; Alexanders

    Reportedly lightest colored malt extract available.

  • 1.0 oz Chinook - 13.0 AA% pellets; boiled 60 min

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 1.0 oz Centennial - 10.0 AA% pellets; boiled 1 min

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

    Our most popular yeast strain is WLP001, California Ale Yeast. This blend celebrates the strengths of California- clean, neutral fermentation, versatile usage, and adds two other strains that belong to the same 'clean/neutral' flavor category. The additional strains create complexity to the finished beer. This blend tastes more lager like than WLP001. Hop flavors and bitterness are accentuated, but not to the extreme of California. This beer is great ...

It has been in the bottle for only 3 weeks (bottled 9-6-9 and this sampling was 9-28-09) but it is just right-right now. I served it with a slice of squeezed orange before and that gave it a totally different sweet orange character. I didn't use any bitter orange peel or bittering orange. I got this organic orange fresh from the tree after I ate it I just threw the peel in the boil at the beginning. This beer has a fantastic citrus aroma and little hop aroma with a hint of malt scents. The color is rich orange amber and not clear but opaque it is clearer before the 'chill haze' appears. It has a great taste and mouth feel. The pilsner malt gives this beer a great light body. The orange peel gives the beer a multi-dynamic layer of flavors that combine well with the white labs 060 and the great hops it has many layers to appreciate. The finish is better than expected for this type of bitter beer. I brewed it with refreshment in mind and I got that I have served it just a little cold and as it warms up it subtly gets different flavors. It is refreshing and thirst quenching yet has a high alcohol punch and is not yet dry. This is definitely one of my best beers and I look forward to trying it in a couple of months it still tastes very young. I just grab a box and some extra grain for more alcohol and body(and try to be imaginative).

Killed the last soldier last night. Wow! This beer was in the bottle for 2 months that has to be a record for me. This thing was great gonna do that again. It was one of the most liked of all my beers. You know it really wasn't that bitter at all but the citrus was a big hit we are going to do more styles like this with citrus peels....MMM Kumquats......Oranges...Lemon..and a touch of lime. Interesting. The aroma was citrusy, the color was amber the head retention and carbonation were great. The alcohol was high it looked great one of my clearest of beers yet. The Belgian pilsner run down the side like sugar crystals, a nice sweet and balanced beer.
