Perfect fall beer. Recommend using Madagascar Bourbon Vanilla (Neilsen-Massey is easiest to find) - stands up well to the tartness of cherry juice and roasted malt flavors during fermentation.

  • 0.85 lbs Belgian Chocolate Malt

  • 0.5 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 4.5 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 0.75 lbs Lactose

    Lactose

    Adds sweetness and body. Use in sweet or milk stouts.

  • 1 oz Fuggle - 4.8 AA% pellets; boiled 60 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 1.0 oz East Kent Goldings - 5.0 AA% pellets; boiled 40 min

Still not perfect, but a good brew...

Still struggling to really balance the cherry flavor. I'm getting more cough syrup than balanced cherry undertones. A very drinkable beer nonetheless.
