Just getting to bottle this one gonna let it sit for a while.I also added dash of Rosemary and Coriander near the end.

Ingredients (Extract5 gal)

  • 1 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 0.5 lbs Belgian Cara-Pils

    Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • 6 lbs Pale Liquid; Alexanders

    Pale Liquid; Alexanders

    Reportedly lightest colored malt extract available.

  • 2 lbs Candi Sugar Amber

    Candi Sugar Amber

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1.0 oz Chinook - 13.0 AA% pellets; boiled 60 min

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 0.50 oz Cascade - 5.5 AA% pellets; boiled 15 min

Very excellent variety of spice beer!!!!

The greatest parts is the real likeness to a Trappist beer. I can taste the funk a little bit of rot or tang like sourdough plus the finish of coriander especially the rosemary is not quite as prominent. I would definitely do this one again. It just gets better as time goes by. I hope I still have some in February for my birthday. It is going slow to mature well. Just as all the best beers do. I t is very high in alcohol so just a few will do. The color and carbonation are great. Good aromas too.
