This is a clone of Dogfish Head's Raison D'Etre. This is attempt 2 at this clone. The first using only 1/4 lb choc. didn't give the coffee profile of the original. Also changed yeast from the WLP 550 to the 510 for a cleaner flavor profile. Brewing this this weekend, post the outcome

  • 0.51 lbs American Chocolate Malt

  • 1 lbs American Caramel 60°L

  • 7.00 lbs Dry Light; Muntons

  • 0.5 lbs Candi Sugar Dark

    Candi Sugar Dark

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1 oz Warrior® - 16.0 AA% pellets; boiled 60 min

    Warrior®

    New hop with much potential. Very stable.

  • 0.50 oz Vanguard - 5.8 AA% pellets; boiled 1 min

  • 8 oz Golden Rasins - (omitted from calculations)

  • White Labs WLP510 Bastogne Belgian Ale Yeast

    White Labs WLP510 Bastogne Belgian Ale Yeast

    A high gravity, Trappist style ale yeast. Produces dry beer with slight acidic finish. More 'clean' fermentation character than WLP500 or WLP530. Not as spicy as WLP530 or WLP550. Excellent yeast for high gravity beers, Belgian ales, dubbels and trippels.

Puree 8oz. of rasins with 2 cups of boiled wort. Add to fermenter

Very happy with this.Note of dried fruit and coffee. Extra chocolate defimately brought forward the roasted flavor. very big beer,OG of 1.084 w/ TG of 1.021, but beet sugar lighten body enough to be very drinkable. Bitterness a little high for a Belgium, but as stated in the summary this was really more of an attemt at a clone. Came out with a fairly close flavor profile, though darker than the original with the addition of the extra chocolate.
