  • .5 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • .5 lbs English Chocolate Malt

    Dark malt that gives a rich red or brown color and nutty flavor. Use for: Brown ales, porters, some stouts Maintains some malty flavor, not as dark as roasted malt.

  • .5 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • .5 lbs Special Roast Malt; Briess

    Toasty, biscuity, sour, tangy flavors.   • 1 tbsp Irish OR 1 WHIRLFLOC Tablet (preferred) @ -15 min - (omitted from calculations)

  • White Labs WLP051 California Ale V

    White Labs WLP051 California Ale V

    From Northern California. This strain is more fruity than WLP001, and slightly more flocculant. Attenuation is lower, resulting in a fuller bodied beer than with WLP001.

Notes

Start with a grain steep @ ~152F for 45 minutes and strain. Add dark spraymalt and boil. I am using a 3.3 lb canof Breiss Liquid Munich (The menu tab says "Alexanders"). Add this liquid late (-45 minutes). For a great finishing, I mix the Phoenix and Glacier hops...Love the aroma!

Whoa! Fabulous!

This beauty has only been in the bottle for 2 weeks, but on First Opening last night I was greeted with a terrific, flavorful, balanced, silky American classic! Super smooth, creamy mouthfeel. Great caramel and muted chocolate malt flavor that is kept in check nicely by a moderate, earthy hops dose. This will probably be the BEST Brown I have ever brewed. In another couple weeks I'll try again, as it is not yet fully carbonated. Wow!

Didn't mature well - Out of balance

Too much Hops in the late boil has led this one to come unbalanced as it aged. Not a bad brown, but it did not live up to the promise when bottled. Next time, back off on the flavoring hops. I may also want to second guess the experiment of using the Cal V Whitelabs -- not the right yeast here.
