This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.
Notes
Steep specialty grains for 30 min. @ 165F. Then remove steeped grain and bring to boil. Add DME, dissolve and add treacle (I ended up using robust molasses, it is the same thing). add Fuggles and start count down to 60. At 30 min. add .5Oz. EKG. At 10 min. add the honey. Honey must have at least 10 min. of boil to sterilize. Irish moss at 5 min. 0.5Oz of EKG at 3 min. Chill fast (so 3 min. EKG dont cook) In my are water needed some crystals added. OG was 1.057 (very close to plan) I prepared a yeast starter of half a liter about 30hrs before pitching, with four tablespoons of DME (boiled). Bottling: I primed with 3Oz. brown sugar, 1Ox. honey, and 0.2oz. of robust molasses. Flavor test was on the spot. FG level will bring ABV to 5.2%. Will test first bottle in two weeks. Rosh Hashana is the Jewish new year where honey is used to dip sower apples, symbolizes a sweet new year. Happy new year, Shana-Tova!!!

Great Honey Porter

Turned out great! tested two bottles after two weeks and was disappointing to see little carbonation. At week three I tested once more and ... Perfect! A bit complicated priming with honey since you need to test the gravity instead of relying on the weight. Honey consistency in not consistent.
Second time around and still great!

Just brewed this again. Left it to condition for three months, and it peaked. Great brew!
