Ingredients (Extract3 gal)

  • 0.25 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 0.13 lbs Belgian Special B

    Belgian Special B

  • 0.13 lbs Belgian Biscuit

    Belgian Biscuit

    Warm baked biscuit flavor and aroma. Increases body. Use in Belgian beers.

  • 6 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 2 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 1 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 2 oz East Kent Goldings - 4.2 AA% whole; boiled 15 min

    Mild, slightly flowery.

  • 0.75 oz Cascade - 8.1 AA% whole; boiled 60 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • 0.5 oz Fuggle - 4.8 AA% pellets; boiled 3 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • Wyeast 3787 Trappist High Gravity™

    Wyeast 3787 Trappist High Gravity™

    Robust top cropping yeast with phenolic character. Alcohol tolerance to 12%. Ideal for Biere de Garde. Ferments dry with rich ester profile and malty palate.

Notes

-Steep specialty grain 30min -90 min total boil -Add First hops at 30min in for 60min boil (include .5oz of Fuggles left over) -Add orange blossom honey last 10min

So it took a while, but a year in the basement did wonders for this damn fine Barley Wine. Dried fruit/raison flavors with a bit of sweetness and full malt presence.
