Mashed at 154 for 20 minutes. Drained off 1.5 gallons of wort. Batch sparged 2 x 2 gallons of 174 degree water for 5.5 gallons of wort. Brought to boil and added 6.6 lbs of John Bull light malt extract. Boiled for 60 minutes, chilled to ~70 degrees. OG 1.101 for just over 5 gallons. Pitched yeast and placed in 70 degree room. --------------------------- Bubbling started within 12 hours of pitching yeast, very rapid bubbling. --------------------------- Tasted and checked gravity after 1 week in fermenter, Gravity 1.034. Taste has strong charcoal and toasted overtones. Color is more of a black ale. Still needs more time, but can taste the 7% alcohol which has already developed! Bubbling has slowed to ~ 1 every 15-20 seconds. --------------------------- After ~ 3 weeks in primary, gravity is 1.031. Taste is much more clean with definite charcoal and toasted flavor. The alcohol content taste is strong but not overpowering. Will probably bottle in a week or so. ------------------------ After about 3 weeks in the bottles, this beer is very good, but is still a little under-carbonated. After 6 weeks, it's really coming into a great flavor. Lots of chocolate and coffee overtones, great taste, and no real alcohol taste. Very delicious. --------------------------- Keep opening 2-3 bottles every few weeks and keeps getting better. Full-flavor, very clean, and very tasty. Fairly decent mouthfeel, and some real caramel overtones coming out around 4 months. ------------------------------- Just opened a bottle after 1 year in the cabinet. Absolutely amazing. One of the best beers I've brewed, but definitely needs some time. Got 3 left, and I'm more excited for them with each passing day.
