This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.
Notes
Steep grains for 30 min @ 65.6°c in 5.2 lt of water. Sparge grains with 5.2 lt of water @ 76°c fill kettle to acheive boil volume of 33 lt.Missed the FG by 3.2 points. Definately will be trying to squeeze out those extra points next time

9/6/09 Brew day didn't quite hit all my targets the O.G. was 1.056 expected was 1.061.I steeped the grains in 5.2 lt of water for 30 mins and then sparged with 5.2 lt of H2O , should have used more sparge water to rinse the grains more thoroughly, next time . Didn't have enough chinook hops. I had 25g left, so I also threw in 15g of northern brewer for the 60 mins boil this brought up the I B U to 62. At 30 mins 40g of cascade along with 2kg of LDME at the 40 min mark I added 500g of LDME then at 45 min added 1 whirlfloc tablet And then the IM.Chiller, at the 59 min mark I added 35g of cascade hops and flamed out. Got the wort down to 20°C and pitched the yeast. I ended up using yeast from a couple of Coopers stubbies. Can't wait to taste it. If it turns out well I may do it again. P.S. Couldn't add the nthn brewer hops to the recipe.

Just racked to secondary 6/14/09 and tested the FG 1.014. Tasted it.The fist flavour to hit the pallet was apples. It does have that fruity ,citruy flavour that I was looking for, with a good bitter backbone.

Bottled it today it had a slight cidery taste. Carbed it up with 128g of dextrose, bulk primed. Can't wait to taste it.

Found it to be a little sweet however the hops do balance out the sweetness . Will make this one again perhaps with a change or two to the hop regime and go a little more easier on the malts. Otherwise a nice drop.Cheers

Enjoying this brew at the moment the longer it ages the better it is becoming. This brew has cleared up , the sweetness has dissapated and the hops are showing thru. This has turned out to be a very nice beer.
