2008 UNHYA Brew-off. (Gruit Beer) Steeped grains for 25 mins @ 180'. Dry hopped Sweet Gale and Paradise Seeds. Best aged for 12 months. Patience is key this is a big beer with lots of complex flavors and aromas. A: Dark mohogany S: Big malt and fruity esters. Hints of dark fruit and mild alcohol notes. M: Robust medium-full bodied mouthfeel with a velvety texture and dry finish. Mild alcohol notes are also present, providing a warmth. Medium carbonation. T: Malty with complex undertones of vanila, licorice, dark fruit (plums and rasins). D: Complexities are well balanced. Alcohol hidden. A beer to be enjoyed with the company of friends.

Incredibly delicious!

I plan to replicate this shortly. I original brewed this in a group and gave many bottles away expect for 2. I drank the last bottle after aging approximately 12 months. Aging has significantly improved this BIG beer, allowing the aroma and flavors a chance to mellow. The complexities have really shined through making this a better beer than most commerial Belgian's.
