Unique top-fermenting yeast which produces the unique and spicy weizen character, rich with clove, vanilla and banana. Best results are achieved when fermentations are held around 68F.
Notes
Steep cara-pils for 30 min. @ 150 degrees. Add cherries @ 20 min. left in boil. Transfer cherries to primary fermentation vessel. Strain out cherries when moved to secondary. Add cherry extract and 3/4 cup priming sugar @ bottling.

I absolutely loved the way this turned out--not too heavy in the cherry flavor--just enough to hint at the fruit.
