American Pale Ale • Extract • 5 gal

This was my first try at my own American Pale from scratch; I sometimes like to start the recipe with extract, then tweak the grain bill if I like the extract version. I used the "extract late" technique (added only 1/2 the extract for the primary boil; remainder added for final 15 minutes) It turned out pretty good (certainly friends and family couldn't get enough) - It got a second place medal/ribbon at the Western Washington State Fair (Puyallup Fair) in 2008. Based on judges feedback, I'd probably double the dry hop and tweak the other hop additions slightly (maybe try different combination).

Ingredients (Extract5 gal)

  • .5 lbs Crystal Malt 80°L

  • 7 lbs Liquid Light Extract

  • 1 oz Cascade - 6.0 AA% whole; boiled 60 min

    Spicy with citrus notes. Slightly grapefruity.

  • .5 oz Organic Pacific Gem - 15.0 AA% whole; boiled 30 min

    Organic Pacific Gem

    Widely used as a bittering hop. Woody flavor.

  • .25 oz Organic Pacific Gem - 15.0 AA% whole; boiled 15 min

    Organic Pacific Gem

    Widely used as a bittering hop. Woody flavor.

  • .25 oz Organic Pacific Gem - 15.0 AA% whole; boiled 5 min
