Ingredients (All Grain7 gal)

  • 11.5 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • .5 lbs Munich Malt

    Munich Malt

    Sweet, toasted flavor and aroma. For Oktoberfests and malty styles

  • .5 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .5 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .5 lbs White Wheat Malt

    White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • 1 oz Simcoe® - 11.0 AA% pellets; boiled 60 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • 1 oz Simcoe® - 11.0 AA% pellets; boiled 15 min

    Wyeast 1272 American Ale II™

    Fruitier and more flocculant than 1056, slightly nutty, soft, clean, slightly tart finish.

Notes

Mash at 154F. Boil 90 minutes. Start fermentation at 64F and raise to 72F by the end.

Had a nice brew day, most everything went according to plan. Came in slightly low on the mash temp at 152F. OG was 1.052. Pitch a 2L starter of 1272 at 64F. Fermented at 64F for 1 day, then 66F for 7 days, then warmed to 72F and added dry hops to the primary. Left dry hops in primary at 72F for 1 week. Then chilled to 40F for kegging.

Kegged and force carbed to about 2.5 volumes of CO2. This beer turned out pretty much just as I expected it would. Lots of "catty", piney, citrusy hop aroma and flavor. Not much malt character. Body is a little thin (due to mash temp being too low) and finish is slightly too dry and bitter. Still a very tasty and drinkable beer. Having only one hop variety, it's a little one dimensional, but a really good way to get to know the hop character. Brought it to my last homebrew club meeting and it was quite popular. OG: 1.052 FG: 1.010 ADF: 81% ABV: 5.5% Eff: 80%
