Weizenbock • Partial Mash • 5 gal

I used 1 1/2 packages of saf-ale wb-06. This stuff did a fantastic job on this beer. I would have used whole wheat malt but I had 8# of liquid laying around so why not just make a Weizenbock? I'm glad I did.

I used saf-ale wb-06 wheat yeast not wyease 3055 and 4 oz of pale choc malt instead of regular choc malt

Needs a little more time to mellow

I've taken a few samples since kegging a few weeks back and it gets better with every week. I'm thinking by the holidays it'll go nice with a Cohiba.

Everybody that got samples seemed to enjoy it. I think I'd rather go all grain next time but as I mentioned I had some extra liquid wheat laying around. I put it to good use. I give it 3.5 stars

This got much better over time. I've recently sampled some from the keg and it's mellowed out and is quite enjoyable. I'd still go all grain and mash at a lower temp next time (148) I'd substitute the extract with pilsner and wheat in a 55/45 ratio pils/wheat.
