Not bad for first try

Let it sit for almost 2 months now; finally broke down and opened one. Straight out of the fridge it actually does not taste great *BUT* as it warms to room temperature the flavors blend and is quiet enjoyable. Still has a raw, unfinished note to it... likely needs to 'age' more or I need to tweak the recipe some. Overall, enjoyable.
