My third and best yet attempt at a wheat. Tart fruity and refreshing. Used only 1/3 cup corn sugar to bottle prime. Came out with a pleasent light carbonation with creamy head (I think due to the flaked wheat and barley)

Ingredients (Partial Mash5 gal)

  • 1.5 lbs Belgian Pils

    Belgian Pils

    Pilsner style malted barley grain.

  • 1.5 lbs White Wheat Malt

    White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • 5 lbs Liquid Wheat Extract

    Liquid Wheat Extract

    Made with a preponderance of wheat malt (55%) for the production of wheat or Weiss beers. Contains no colored malts or hops.

  • .5 lbs Barley Flaked

    Barley Flaked

    Helps head retention, imparts creamy smoothness. For porters and stouts.

  • .5 lbs Wheat Flaked

    Wheat Flaked

    Belgian White Ale(wit), other specialty beers.

  • .5 oz Sterling - 7.5 AA% pellets; boiled 60 min

    Perceived to be similar to a Saaz and Mt. Hood combination. Finding favor as a Saaz replacement.

  • 0.75 oz Mt. Hood - 5.0 AA% pellets; boiled 30 min

    Used mainly for aroma and flavor in American and German style ales and lagers. Aroma is mild, pleasant, light, and clean.

Excellent summer time beer

had great success with this one. Great head and balanced flavors. I think it was the flaked barley too. Used 1 lb each of the flaked wheat and barley. I used dried orange peel and lemon grass (6 8 inch stalks) for my citrus notes. this gave the brew a nice earthy note to the citrus flavors. Next time I will add more lemon grass. I could taste it but would like to have a bit more.
