Could you substitute Cascade or Rainier hops for the Hallertau and Tettnanger?

You could if you want a more piney and citrusy flavor and aroma. In my experience, helles has a very mild and spicy/earthy hops flavor. It's a very light beer, so the hops really come through easily. The good thing about home brew is you can substitute any ingredients you want to add your own touch.
